Race against the clock. Once you are good enough, you can compete against computer controlled opponents and unlock new tracks.
Going off the track isn't much of a penalty and motorcycle enthusiasts might lament the lack of real world physics. But I would just lament the idea of thinking they would find that in a flash game. Right back at your pointdexter.
